Dis pho you mama!
I have made pho before. But I did it in the instant pot, and I followed some asian guy on YouTube for the recipe. I made it another time and I cheated with a spice bag that was given to us from one of Tresa's friends. Even with the instant pot it takes over 2+hrs for everything, which isn't bad. Real pho soup takes 8+hours.
For today, Kieran wanted to make pho, without the instant pot, instead making everything in a regular pot on our stove, as traditional as possible. And he did everything, from making the broth to cooking the brisket and the noodles and chopping the onions and basil for garnish. He found some Vietnamese lady on YouTube that didn't even speak english and made a list of ingredients and procedure for making the broth and noodles. All I did was drink beer and doze off in my office chair.
So off we went to get beef knuckles and brisket and eye of round. And a few other things we needed to make pho from scratch. The rest we had at home. I'm not going list the ingredients. Google can do that for you or Pho you.

It did take 6+hrs, and the brisket was done well, I was worried that it'd be tough and flank typically is a tough cut, but it came apart easily. The end result was a delicious mother's day soup pho mama.
Sorry...no leftovers.
